Chris and Intan from Derw Coffee talk us through their favourite cocktails using their flagship coffee liqueur

Derw Coffee is a small batch Anglesey-crafted business which uses their cold brew coffee recipe to make their award winning coffee liqueur.

When the liqueur was launched in 2021, it was quickly showered with prestigious accolades, such as a Great Taste Award, and achieving “Gold” and “Best in Wales” at the World Liqueur Awards.

Derw’s Arabica beans are roasted in North Wales, and are ethically sourced. They are then brewed for 16 hours, making for a smooth cold brew coffee.

Chris and Intan moved back to Wales in 2020 after living in Indonesia for six years. They made sure to develop Derw Coffee in a sustainable way, whilst combining their two cultures: Welsh roasting and water, combined with Indonesian flavours like vanilla, coconut and clove.

The Derw name comes from the Welsh word for oak, which was Chris’ father’s favourite tree. I think it’s fair to say that the business for Chris and Intan is very personal, so it’s fantastic to see their business go from strength to strength. The liqueur is used in several restaurants and bars such as Catch 22 and Mojo's.

Derw’s wonderfully rich and warming coffee liqueur makes for a perfect festive cocktail. Chris and Intan have very kindly shared some of their recipes with North Wales Grub, with some of their thoughts behind the recipes.

Here are two recipes for you to make at home over the festive period.

Derw Coffee Negroni

Derw Coffee Negroni

My favourite would have to be the negroni as it has so much variety and depth. Tangy, sweet, and then with a bitter finish. It's refreshing and indulgent all at once.

For one glass:

  • 25ml Derw Coffee Liqueur

  • 25ml quality gin

  • 25ml sweet vermouth

  • 25ml Campari

Method:

  1. Pour all of the ingredients into a glass with a large ice cube, and stir.

  2. Rub an orange peel around the rim and then pop it into the glass.

  3. And enjoy!

The Maple Clove Espresso Martini

The cloves provide an intense but not overpowering spice, and the maple syrup binds it all together nicely.

  • 50ml Derw Coffee Liqueur

  • 25ml espresso shot or very strong coffee

  • 10ml maple syrup

  • 9 whole cloves

  • 4 ice cubes

Method:

1. Put 6 whole cloves in a cocktail shaker or jam jar.
2. Pour on the hot espresso/strong coffee.
3. Swirl for 15 seconds or so.
4. Add the maple syrup, then ice, and lastly the Derw Cold Brew Coffee Liqueur.
5. Shake vigorously for 20 seconds.
6. Strain through a sieve into a martini glass.
7. Once the foam on top is quite thick, place 3 whole cloves on top.
